Grilled Pineapple Black Bean Tacos

1 ripe pineapple, peeled, cored, and sliced into rings

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, diced

1 avocado, diced

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn or flour tortillas

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium heat on the stovetop.

    Grill the Pineapple: Lightly brush both sides of the pineapple rings with olive oil. Place the rings on the grill and cook for about 2-3 minutes per side, or until grill marks appear and the pineapple is caramelized. Remove from the grill and let cool slightly, then chop into bite-sized pieces.

      Sauté the Vegetables: In a skillet, heat the remaining olive oil over medium heat. Add the diced red onion and bell pepper. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Stir in the black beans, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Cook for another 3-4 minutes until heated through.

        Warm the Tortillas: If using corn tortillas, warm them on the grill for about 30 seconds on each side or in a dry skillet over medium heat until pliable.

          Assemble the Tacos: To each tortilla, add a spoonful of the sautéed black bean mixture, followed by an equal amount of grilled pineapple. Top with diced avocado and fresh cilantro.

            Serve: Present your tacos with lime wedges on the side for squeezing over the top.
