Grilled Mango Pineapple Chicken

4 chicken breasts (boneless, skinless)

1 ripe mango, peeled, pitted, and diced

1 cup fresh pineapple, diced

1/4 cup orange juice (freshly squeezed preferred)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon ground cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro for garnish (optional)

Instructions
 

Prepare Marinade: In a medium bowl, combine the diced mango, pineapple, orange juice, soy sauce, honey, olive oil, minced garlic, grated ginger, cumin, salt, and black pepper. Mix well until combined.

    Marinate Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, making sure all pieces are coated. Reserve the other half for basting. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

      Preheat Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

        Grill Chicken: Remove the chicken from the marinade and discard the used marinade. Place the chicken breasts on the preheated grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F, basting occasionally with the reserved marinade during the last few minutes of grilling.

          Rest Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing. This helps the juices redistribute for a more tender bite.

            Serve: Slice the grilled chicken and serve it atop a bed of mixed greens, or alongside rice or quinoa. Drizzle any remaining marinade over the top and garnish with fresh cilantro if desired.
