Grilled Halloumi & Watermelon Salad

200g halloumi cheese, sliced into thick pieces

4 cups watermelon, cut into cubes (seedless preferred)

1 cucumber, thinly sliced

1 cup arugula or mixed salad greens

1/4 cup fresh mint leaves, roughly chopped

1/4 cup red onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Juice of 1 lime

Salt and pepper, to taste

1 tablespoon honey (optional for extra sweetness)

Instructions
 

Prepare the Grill: Preheat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

    Grill the Halloumi: Place the sliced halloumi on the grill. Grill for about 2-3 minutes on each side, until golden brown and grill marks appear. Remove from heat and set aside.

      Prepare the Salad Base: In a large bowl, combine the arugula (or mixed greens), watermelon cubes, cucumber slices, mint leaves, and red onion. Toss gently to mix everything without smashing the watermelon.

        Make the Dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, lime juice, honey (if using), and a pinch of salt and pepper until well combined.

          Combine and Serve: Drizzle the dressing over the salad and toss gently to coat. Top with the grilled halloumi slices.

            Final Touch: Add an extra drizzle of olive oil or a spritz of lime juice if desired, and serve immediately.
