Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1/4 medium red onion, finely chopped

1 jalapeño pepper, seeds removed and finely chopped (adjust for spice)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, pepper, and lemon juice. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Prepare the Strawberry Salsa: While the chicken is marinating, combine diced strawberries, red onion, jalapeño, cilantro, lime juice, and salt in a medium bowl. Stir gently to mix the flavors. Taste and adjust salt or lime juice as needed. Refrigerate until ready to serve.

Grill the Chicken: Preheat the grill to medium-high heat. Remove chicken from the marinade and let any excess drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C).

Rest the Chicken: Once the chicken is grilled, remove it from the grill and let it rest for about 5 minutes to keep it juicy.

Serve: Slice the grilled chicken and top with a generous spoonful of strawberry salsa. Serve with your choice of sides, such as rice or a fresh green salad.
