Grilled Chicken with Mango Salsa

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

For the Mango Salsa:

2 ripe mangoes, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt, to taste

Instructions
 

Prepare the Chicken: In a large mixing bowl, combine olive oil, cumin, paprika, garlic powder, salt, pepper, and lime juice. Add the chicken breasts and coat them well with the marinade. Cover and let it marinate for at least 30 minutes (or refrigerate for up to 2 hours for more flavor).

    Make the Mango Salsa: In a medium bowl, mix the diced mangoes, red onion, minced jalapeño, lime juice, chopped cilantro, and salt. Stir gently until combined. Adjust the seasoning to taste and set aside to let the flavors meld.

      Preheat the Grill: Preheat your outdoor grill to medium-high heat. Lightly oil the grates to prevent sticking.

        Grill the Chicken: Once the grill is hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

          Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes before slicing. This helps retain the juices.
