4 bone-in, skin-on chicken thighs

1/4 cup olive oil

Juice and zest of 1 large orange

Juice and zest of 1 lemon

3 cloves garlic, minced

2 tablespoons honey

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish

Marinate the Chicken: In a large mixing bowl, whisk together olive oil, orange juice, lemon juice, orange zest, lemon zest, minced garlic, honey, Dijon mustard, smoked paprika, dried oregano, salt, and pepper. Add the chicken thighs to the bowl, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably 4-6 hours for maximum flavor.

    Preheat the Grill: Heat your grill to medium-high heat, about 400°F (200°C). If using a charcoal grill, make sure the coals are glowing and ashy.

      Prepare the Grill: Lightly oil the grill grates to prevent sticking.

        Grill the Chicken: Remove the chicken thighs from the marinade, letting excess marinade drip off. Place the chicken thighs skin-side down on the grill. Grill for about 6-8 minutes until the skin is crispy and golden.

          Flip and Cook Through: Flip the chicken thighs over and reduce the heat to medium. Grill for an additional 10-15 minutes, or until the internal temperature reaches 165°F (75°C). Brush any leftover marinade onto the chicken during the last 5 minutes of grilling for extra flavor.

            Rest and Garnish: Once done, remove the chicken from the grill and let it rest for 5 minutes. Garnish with freshly chopped parsley and serve with your choice of sides.
