1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

Juice of 2 limes

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

8 small corn tortillas

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1/2 cup fresh cilantro, chopped

1/2 cup crumbled queso fresco or feta cheese

1 avocado, sliced

Lime wedges, for serving

Salsa of your choice, for topping

Instructions
 

Marinate the Chicken:

    - In a medium bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, black pepper, and cayenne pepper.

      - Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.

        Preheat the Grill:

          - Preheat your grill to medium-high heat (about 400°F).

            Grill the Chicken:

              - Remove the chicken from the marinade and place it on the hot grill. Cook for about 5-7 minutes on each side or until the internal temperature reaches 165°F and the chicken has nice grill marks.

                - Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it into bite-sized pieces.

                  Warm the Tortillas:
