Grilled Cheesy Caprese Stuffed Chicken

4 boneless, skinless chicken breasts

8 oz fresh mozzarella cheese, sliced

2 large ripe tomatoes, sliced

1 cup fresh basil leaves

2 tablespoons balsamic glaze

3 tablespoons olive oil, divided

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon Italian seasoning

Toothpicks or kitchen twine for securing

Instructions
 

Prepare the Chicken: Preheat the grill to medium-high heat. Using a sharp knife, carefully cut a pocket into each chicken breast, being careful not to cut all the way through.

    Stuff the Chicken: Inside each pocket, layer slices of fresh mozzarella, tomato, and basil leaves. Drizzle a little balsamic glaze inside the pocket, then season with salt, pepper, and Italian seasoning. Secure the edges of each pocket using toothpicks or kitchen twine.

      Marinate: In a small bowl, mix 2 tablespoons of olive oil with minced garlic, and brush this mixture over the outside of the stuffed chicken breasts. Make sure to coat thoroughly. Season the outside of the chicken with additional salt and pepper if desired.

        Grill the Chicken: Place the stuffed chicken breasts on the preheated grill. Grill for about 6-7 minutes on each side, or until the chicken is fully cooked (internal temperature should reach 165°F) and the cheese is melted.

          Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes. Drizzle with extra balsamic glaze before serving. You can serve this dish with a simple side salad or your favorite grilled vegetables.
