2 large flatbreads (store-bought or homemade)

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (fresh, canned, or frozen)

1/2 cup fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper, to taste

Optional: jalapeño slices, for added heat

Marinate the Chicken: In a bowl, combine the shredded chicken with 1/2 cup of BBQ sauce. Mix until the chicken is fully coated. Allow marinating for at least 15 minutes while you prepare the other ingredients.

    Prepare the Flatbreads: Preheat your grill or stovetop grill pan to medium-high heat. Brush the flatbreads lightly with olive oil on one side to prevent sticking and enhance browning.
