Green Chili Turkey Quesadilla Squares

1 lb ground turkey

1 cup canned green chilies, drained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp cumin

1 tsp garlic powder

½ tsp onion powder

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

4 large flour tortillas

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the ground turkey. Cook, breaking it apart with a spatula, until it is evenly browned and cooked through, about 5-7 minutes.

    Season the Mixture: Stir in the green chilies, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes for the flavors to meld together. Remove from heat and set aside.

      Prepare the Tortillas: Lay out two tortillas on a clean flat surface. On each tortilla, evenly spread half of the turkey mixture followed by half of each cheese type - cheddar and Monterey Jack.

        Add Top Tortillas: Place the remaining tortillas on top of the cheese and turkey mixtures to create two quesadilla stacks.

          Cook the Quesadilla Squares: In the same skillet used for the turkey, add the remaining tablespoon of olive oil over medium-low heat. Carefully place one quesadilla stack in the skillet. Cook for 3-4 minutes on each side or until golden brown and crispy, ensuring the cheese melts. Repeat with the second stack.

            Slice and Serve: Remove the quesadilla stacks from the skillet and let them cool slightly. Using a sharp knife or pizza cutter, slice each stack into squares.
