Green Chili Turkey Melt Sandwiches

8 slices of sourdough bread

1 pound deli sliced turkey breast

1 cup shredded Monterey Jack cheese

1/2 cup diced green chilies (canned or fresh)

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 tablespoons unsalted butter, softened

Fresh cilantro or parsley, for garnish (optional)

Prepare the Spread: In a small bowl, mix together the mayonnaise, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well combined and set aside.

    Assemble the Sandwiches: Lay out 4 slices of sourdough bread on a clean surface. Spread a generous amount of the mayonnaise mixture on each slice.
