4 whole wheat pita breads

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

4 large eggs

1/2 cup green chili peppers, diced (fresh or canned)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Pitas: Place the whole wheat pita breads on a baking sheet. Brush each pita lightly with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.

      Add the Base Layer: Evenly distribute the shredded mozzarella cheese over the pitas, ensuring to cover them but leaving a small border around the edges for the crust.

        Add the Veggies: Scatter the diced green chili peppers, halved cherry tomatoes, and chopped red onion evenly over the cheese layer on each pita.

          Crack the Eggs: Create a small well in the center of each pita pizza by pushing aside some of the toppings with a spoon. Carefully crack one egg into each well.

            Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny (or cook longer if you prefer your yolks firm).
