Greek Yogurt Banana Oatmeal Muffins

1 cup rolled oats

1 cup whole wheat flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

2 ripe bananas, mashed

1/2 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

2 large eggs

1 tsp vanilla extract

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup dark chocolate chips or dried fruit (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon. Mix well.

      In another bowl, whisk together the mashed bananas, Greek yogurt, honey (or maple syrup), applesauce, eggs, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients, and mix until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          If you're adding nuts or chocolate chips, gently fold them into the batter at this stage.

            Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
