Ingredients

4 cups of seedless watermelon, cut into 1-inch cubes

1 cup of feta cheese, crumbled or cubed

1/2 cup of fresh mint leaves

1/4 cup of balsamic glaze

Freshly cracked black pepper, to taste

Wooden skewers (about 8-10, soaked in water for 30 minutes if wooden)

Instructions

Prep the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling or assembly.

Cut Ingredients: Cut the seedless watermelon into 1-inch cubes. If using block feta cheese, slice it into 1-inch cubes or crumble it.

Assemble the Skewers: On each skewer, thread one watermelon cube, followed by a mint leaf, and then a feta cube. Repeat this process until the skewer is filled, leaving some space at both ends. Alternate between watermelon and feta if you prefer.

Drizzle with Balsamic Glaze: Arrange the completed skewers on a serving platter. Drizzle generously with balsamic glaze to add flavor and a beautiful finish.

Season: Lightly sprinkle black pepper over the skewers for an added kick.

Chill (Optional): For extra refreshment, you can chill the skewers in the refrigerator for about 15-30 minutes before serving.

Serve: Enjoy these refreshing Greek Watermelon Feta Skewers as a perfect appetizer, side dish, or light snack at your next gathering!
