Ingredients

3 cups of seedless watermelon, cut into bite-sized cubes

1 ½ cups of feta cheese, crumbled or cubed

1 cup of fresh mint leaves, gently torn

¼ cup of balsamic glaze

1 tablespoon of extra virgin olive oil

Freshly cracked black pepper, to taste

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

Instructions

Prepare the Skewers: If you’re using wooden skewers, soak them in water to prevent burning on the grill or under the broiler.

Layer the Ingredients: On each skewer, thread a piece of watermelon, followed by a piece of feta, and a mint leaf. Repeat until the skewer is filled, leaving a little space at both ends for easy handling.

Drizzle with Olive Oil: Once all the skewers are assembled, drizzle them lightly with olive oil, adding a touch of flavor and moisture.

Add Seasoning: Sprinkle freshly cracked black pepper over the skewers for a bit of spice that complements the sweetness of the watermelon and the tanginess of the feta.

Glaze and Serve: Just before serving, drizzle the skewers with balsamic glaze for a sweet and tangy finish.

Chill (Optional): If desired, you can refrigerate the skewers for 15-20 minutes before serving to enhance the flavors and provide a refreshing chill.
