Ingredients

1/2 cup balsamic vinegar

1/4 cup extra-virgin olive oil

2 tablespoons Dijon mustard

1 tablespoon honey (or maple syrup for a vegan option)

1 clove garlic, minced

Salt and freshly ground black pepper to taste

1 teaspoon dried oregano (optional)

Fresh herbs (parsley or basil), chopped for garnish (optional)

Instructions

In a medium bowl, whisk together the balsamic vinegar, Dijon mustard, honey, and minced garlic until well combined.

Slowly pour in the extra-virgin olive oil while whisking continuously to emulsify the dressing, creating a smooth and creamy texture.

Season with salt, pepper, and dried oregano (if using), adjusting to taste.

For additional flavor, consider folding in some finely chopped fresh herbs such as parsley or basil.

Transfer the vinaigrette to a clean, airtight jar or bottle. Let it sit for at least 10 minutes to allow the flavors to meld together.

Shake or whisk again before serving, and drizzle over your favorite salads or use as a marinade for grilled veggies or meats.
