250g (9oz) grated carrots

200g (7oz) granulated sugar

100g (3.5oz) light brown sugar

3 large eggs

150ml (5 fl oz) vegetable oil

200g (7oz) all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp salt

100g (3.5oz) toasted walnuts (optional)

100g (3.5oz) raisins (optional)

200g (7oz) cream cheese, at room temperature

100g (3.5oz) unsalted butter, soft

300g (10.5oz) icing sugar

Zest of 1 lemon

1 tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F). Grease and line two 8-inch round cake pans with parchment paper.

    Prepare Carrots: In a large bowl, combine the grated carrots with the granulated sugar and light brown sugar. Let it sit for about 10-15 minutes to release moisture.

      Mix Wet Ingredients: In another bowl, whisk the eggs and add the vegetable oil. Mix well until fully combined.

        Combine Mixtures: Pour the egg-oil mixture into the carrot-sugar mixture and stir until well blended.

          Sift Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet mixture, folding gently until just combined. Be careful not to overmix.

            Add Extras: Fold in the toasted walnuts and raisins if using, ensuring they are evenly distributed.

              Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

                Make the Frosting: While the cakes are cooling, prepare the cream cheese frosting. Beat together the cream cheese and soft butter in a bowl until smooth. Gradually add the icing sugar, mixing well. Add the lemon zest and vanilla extract, and whisk until fluffy.

                  Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake.
