1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 cup buttermilk

Zest of 2 lemons

¼ cup fresh lemon juice

2 tablespoons poppy seeds

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ teaspoon vanilla extract

For the Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 2-3 minutes.

        Add Eggs: Add the eggs one at a time, mixing well after each addition.

          Incorporate Buttermilk and Flavors: Gradually add in the buttermilk, lemon zest, lemon juice, and vanilla extract, mixing until fully combined.
