Ginger Soy Glazed Meatballs

Ingredients
  

For the Meatballs:

1 lb (450g) ground beef or ground turkey

1/2 cup breadcrumbs (panko preferably)

1/4 cup grated fresh ginger

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1 large egg

1 tbsp soy sauce

1 tsp sesame oil

Salt and pepper to taste

For the Ginger Soy Glaze:

1/4 cup soy sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar

2 tsp grated fresh ginger

1 garlic clove, minced

1 tsp cornstarch mixed with 2 tsp water (for thickening)

Sesame seeds and sliced green onions for garnish

Instructions
 

Prepare the Meatball Mixture:

    In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, grated ginger, minced garlic, chopped green onions, egg, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully combined.

      Form the Meatballs:

        Preheat your oven to 400°F (200°C). With your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

          Bake the Meatballs:

            Bake the meatballs in the preheated oven for about 15-20 minutes or until they are cooked through and browned on the outside.

              Prepare the Ginger Soy Glaze:

                While the meatballs are baking, in a saucepan over medium heat, combine the soy sauce, honey (or brown sugar), rice vinegar, grated ginger, and minced garlic. Bring to a gentle simmer.

                  Thicken the Sauce:

                    Once the sauce starts bubbling, stir in the cornstarch mixture and cook for another 2-3 minutes until the sauce thickens slightly. Remove from heat.

                      Glaze the Meatballs:

                        Once the meatballs are done baking, transfer them to the saucepan with the ginger soy glaze. Toss gently until the meatballs are well-coated in the glaze.

                          Serve:

                            Plate the glazed meatballs, sprinkle with sesame seeds and sliced green onions, and serve them over steamed rice or alongside stir-fried vegetables for a complete meal.
