Garlic Parmesan Zucchini Noodle Stir Fry

4 medium zucchinis, spiralized into noodles

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 bell pepper, thinly sliced (any color)

1 cup broccoli florets

¼ teaspoon red pepper flakes (optional)

Salt and pepper to taste

½ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (for garnish)

1 tablespoon balsamic glaze (for drizzling, optional)

Instructions
 

Prepare Zucchini Noodles: Using a spiralizer, create zucchini noodles from the zucchinis and set aside. You can also use a vegetable peeler for flat noodles if preferred.

    Sauté Vegetables: In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant.

      Add Bell Pepper and Broccoli: Add the sliced bell pepper and broccoli florets to the skillet. Stir-fry for about 3-4 minutes until they are slightly tender but still crisp.

        Incorporate Cherry Tomatoes: Toss in the cherry tomatoes and the red pepper flakes (if using). Cook for an additional 2-3 minutes until the tomatoes are soft and start to blister.

          Add Zucchini Noodles: Push the vegetables to one side of the skillet and add the remaining 2 tablespoons of olive oil to the empty side. Add the spiralized zucchini noodles and toss everything together gently. Stir-fry for about 2-3 minutes until the noodles are heated through but still tender.

            Season and Add Cheese: Season the stir fry with salt and pepper to taste. Sprinkle the grated Parmesan cheese over the top and stir to combine, allowing the cheese to melt slightly.

              Serve: Remove from heat and transfer the stir fry to plates. Garnish with fresh basil and a drizzle of balsamic glaze if desired. Serve immediately for the best texture.
