Garlic Butter Tilapia with Spinach

4 tilapia fillets

4 tablespoons unsalted butter

4 cloves garlic, minced

2 cups fresh spinach

1 tablespoon lemon juice

1 teaspoon lemon zest

Salt and pepper, to taste

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Slices of lemon (for garnish)

Instructions
 

Prepare the Ingredients: Rinse the tilapia fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt, pepper, and paprika.

    Melt the Butter: In a large skillet over medium heat, melt 2 tablespoons of unsalted butter. Allow the butter to bubble, and then add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to let it brown.

      Cook the Tilapia: Carefully place the seasoned tilapia fillets in the skillet. Cook them for about 3-4 minutes on one side, without moving them, until golden brown. Flip the fillets and cook for another 3-4 minutes on the other side. Keep the heat at medium to avoid overcooking.

        Add Spinach: Once the tilapia is cooked through and flakes easily with a fork, remove it from the skillet and set aside on a plate. In the same skillet, add the remaining 2 tablespoons of butter and let it melt. Add the fresh spinach and sauté until wilted (about 2-3 minutes), stirring occasionally.

          Combine & Flavor: Add the lemon juice and lemon zest to the spinach, stirring well. Cook for another minute to combine the flavors. Season with additional salt and pepper to taste.

            Serve: Plate the tilapia fillets and top them with the sautéed spinach. Optionally, garnish with chopped fresh parsley and lemon slices for a refreshing finish.
