Garlic Butter Steak Bites with Potatoes

1 lb sirloin steak, cut into bite-sized pieces

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

1 lb baby potatoes, halved

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a medium pot, add the halved baby potatoes and cover them with water. Season with salt.

        - Bring to a boil over medium-high heat, then reduce to a simmer and cook until fork-tender, about 10-12 minutes. Drain and set aside.

          Roast the Potatoes:

            - In a large bowl, toss the drained potatoes with 1 tablespoon of olive oil, salt, pepper, and half of the rosemary and thyme.

              - Spread the seasoned potatoes in a single layer on a baking sheet and roast in the preheated oven until golden brown and crispy, about 20-25 minutes, tossing halfway through.

                Cook the Steak Bites:

                  - While the potatoes are roasting, season the steak pieces with salt and pepper.

                    - In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat.

                      - Once hot, add the steak bites in a single layer, being careful not to overcrowd the pan. Sear for about 2-3 minutes on each side until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.

                        Make the Garlic Butter:

                          - In the same skillet, lower the heat to medium and add the butter.
