1 lb (450 g) fresh carrots, peeled and cut into fry shapes

3 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional for a smoky flavor)

Fresh lemon juice, for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Garlic Butter: In a small saucepan, melt the unsalted butter over low heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned. Remove from heat and stir in the chopped parsley, salt, black pepper, and smoked paprika (if using).

      Toss the Carrots: In a large mixing bowl, add the carrot fries. Pour the garlic butter mixture over the carrots and toss until they are evenly coated.

        Arrange on Baking Sheet: Spread the coated carrot fries in a single layer on the prepared baking sheet. Make sure there’s space between each fry for even roasting.

          Roast: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, flipping the carrot fries halfway through to ensure they brown evenly. They should be golden and tender when done.
