Garlic Butter Mushroom and Spinach Pizza

For the Garlic Butter:

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

For the Pizza:

1 pizza dough (store-bought or homemade)

1 cup mushrooms, sliced (button, cremini, or shiitake)

2 cups fresh spinach leaves

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.

    Make the Garlic Butter: In a small saucepan over low heat, melt the butter. Add the minced garlic and cook for 2-3 minutes until fragrant but not browned. Stir in the chopped parsley, and season with salt and pepper. Remove from heat and set aside.

      Sauté the Mushrooms: In a skillet, heat olive oil over medium heat. Add the sliced mushrooms, and sauté for about 5-7 minutes or until they become golden brown and tender. Season with a pinch of salt, pepper, and dried oregano. Add the spinach and cook until wilted, about 2-3 minutes. Remove from heat.

        Prepare the Pizza Base: On a lightly floured surface, roll out the pizza dough to your desired thickness. Transfer it to a baking sheet or pizza peel if using a pizza stone.

          Assemble the Pizza: Brush the garlic butter generously over the surface of the pizza dough. Evenly distribute the sautéed mushrooms and spinach on top. Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the vegetables. If desired, add a sprinkle of red pepper flakes for some heat.

            Bake the Pizza: Transfer the pizza to the preheated oven (or onto the pizza stone). Bake for 12-15 minutes, or until the crust is golden and crispy, and the cheese is melted and bubbly.

              Finish and Serve: Once baked, remove the pizza from the oven. Let it cool for a couple of minutes before slicing. Optionally, you can drizzle with a little more garlic butter or olive oil before serving.
