½ tsp salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup buttermilk

½ cup rainbow sprinkles

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tbsp all-purpose flour

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

4 tbsp heavy cream

1 tsp vanilla extract

½ cup rainbow sprinkles for decoration

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

    Make Funfetti Cake Batter: In a medium bowl, whisk together flour, baking powder, and salt. In a large mixing bowl, cream the softened butter with granulated sugar until light and fluffy. Add in eggs one at a time, mixing well after each addition. Stir in vanilla extract.

      Combine Wet and Dry Ingredients: Add the flour mixture to the butter mixture in three parts, alternating with the buttermilk. Begin and end with the flour. Mix until just combined, then gently fold in the rainbow sprinkles.

        Bake Cake Layers: Evenly distribute the batter among the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

          Prepare Cheesecake Layer: While the cake layers cool, reduce the oven temperature to 325°F (160°C). In a mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add in the eggs, vanilla extract, and flour, mixing until just combined.

            Bake Cheesecake: Pour the cheesecake batter into a greased 8-inch round cake pan. Bake for 40-45 minutes or until the edges are set and the center is slightly jiggly.
