1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 large egg

1/2 cup milk (or plant-based alternative)

1/4 cup vegetable oil

1 tsp vanilla extract

1 cup fresh strawberries, diced

1 cup plain or vanilla frozen yogurt

Optional: additional strawberries for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin pan or line it with muffin liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, rolled oats, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the egg, then add milk, vegetable oil, and vanilla extract. Mix until smooth.

        Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

          Incorporate Strawberries: Fold in the diced strawberries to the batter gently.

            Fill Muffin Pan: Using a spoon or a measuring cup, fill each muffin cavity about halfway with the batter. Flatten the batter slightly with the back of the spoon.

              Add Frozen Yogurt: Drop a heaping teaspoon of frozen yogurt into the center of each muffin ring, then top with more muffin batter to cover the yogurt completely.

                Bake: Place the muffin pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean (with a few melted yogurt bits being okay).

                  Cool: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                    Serve & Enjoy: You can serve the muffin rings warm or let them cool completely and serve at room temperature. Optionally, top them with additional fresh strawberries or a drizzle of honey before serving.
