2 cups plain Greek yogurt

1 cup mini marshmallows

1/2 cup chocolate chips (milk or dark, as desired)

1/4 cup honey or maple syrup

1/2 cup crushed graham crackers

Pinch of salt

1 teaspoon vanilla extract

Instructions
 

Mix the Yogurt Base: In a large bowl, combine the plain Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir well until fully mixed and creamy.

    Add the Goodies: Gently fold in the mini marshmallows, chocolate chips, and crushed graham crackers into the yogurt mixture. Be careful not to break the marshmallows.

      Prepare the Molds: Line a mini muffin or ice cube tray with parchment paper or silicone molds to prevent sticking.

        Fill the Molds: Spoon the yogurt mixture evenly into the prepared molds, pressing down slightly to pack the mixture well.

          Freeze: Place the molds in the freezer and let freeze for at least 4-6 hours, or until fully solid.

            Remove from Molds: Once frozen, carefully remove the s'mores ice cream coins from the molds. If they're stuck, run a bit of warm water on the outside of the molds for easier release.

              Serve: Enjoy immediately for a refreshing treat, or store them in an airtight container in the freezer for later enjoyment!
