Ingredients

For the Brownie Base:

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Frozen Yogurt Layer:

2 cups plain Greek yogurt

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup fresh raspberries (plus extra for garnish)

For Topping (Optional):

Mini chocolate chips

Chopped nuts

Additional raspberry puree

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper.

Make the Brownie Batter: In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the granulated sugar, mixing until well combined. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

Add Dry Ingredients: Sift in the cocoa powder, flour, salt, and baking powder. Stir until combined; the batter should be thick and glossy.

Bake the Brownies: Pour the brownie batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.

Prepare the Frozen Yogurt Mix: In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Mix well until it’s smooth and creamy.

Add Raspberries: Gently fold in the fresh raspberries. Be careful not to smash them too much, as you want some whole berries for added texture.

Assemble the Discs: Once the brownies are cooled, cut them into your desired shapes using a round cookie cutter. Place the brownie discs on a baking sheet lined with parchment paper.

Top with Yogurt Mix: Spoon the raspberry yogurt mixture on top of each brownie disc, smoothing it into an even layer. If desired, sprinkle some mini chocolate chips or chopped nuts on top for added crunch.

Freeze: Place the baking sheet in the freezer and freeze for at least 4 hours, or until the yogurt is firm.

Serve: Once frozen solid, carefully remove the discs from the parchment paper and place them on a serving plate. Garnish with extra fresh raspberries or a drizzle of raspberry puree if desired.

Enjoy: Serve these delicious Frozen Yogurt Raspberry Brownie Discs straight from the freezer for a refreshing sweet treat!
