1 cup pumpkin puree (canned or fresh)

1/2 cup Greek yogurt (plain or vanilla for added sweetness)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

Pinch of salt

For the Crumble Topping:

1/2 cup rolled oats

1/2 cup almond flour (or your choice of flour)

1/4 cup brown sugar (packed)

1/4 cup melted coconut oil (or unsalted butter)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

A pinch of salt

For Serving:

Whipped cream (optional)

Extra pumpkin spice (for garnish, optional)

Instructions
 

Prepare the Pumpkin Layer:

    In a large mixing bowl, combine the pumpkin puree, Greek yogurt, honey (or maple syrup), vanilla extract, pumpkin pie spice, and salt. Whisk until the mixture is smooth and well combined.

      Make the Crumble Topping:

        In another bowl, mix together the rolled oats, almond flour, brown sugar, melted coconut oil, cinnamon, nutmeg, and a pinch of salt. Use a fork to combine ingredients until crumbly and well mixed.

          Assemble the Cups:

            In small cups or ramekins, layer the pumpkin mixture at the bottom, filling each cup about halfway. On top of the pumpkin layer, generously sprinkle the crumble topping to completely cover it.

              Freeze:

                Place the filled cups in the freezer for at least 4 hours or until completely frozen. If you're short on time, a minimum of 2 hours will firm them up but may require slightly longer to scoop.
