Frozen Yogurt Peanut Butter Cups

1 cup creamy peanut butter (natural, unsweetened)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

2 cups Greek yogurt (plain or vanilla flavored)

1 cup chocolate chips (dark or milk chocolate)

1 tablespoon coconut oil (optional, for chocolate coating)

Prepare the Peanut Butter Mixture: In a mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and sea salt. Mix well until smooth and creamy.

    Spoon into Liners: Line a mini muffin tin with mini paper cupcake liners. Spoon a tablespoon of the peanut butter mixture into each liner, pressing down slightly to form the base. Reserve some of the mixture for topping later.

      Freeze the Base: Place the muffin tin in the freezer for about 30 minutes, or until the peanut butter base is firm.

        Make the Yogurt Layer: While the peanut butter base is freezing, in another bowl, stir the Greek yogurt to make it smooth. If desired, add a drizzle of honey or vanilla for extra sweetness.

          Add Yogurt Layer: Remove the muffin tin from the freezer and spoon a layer of the yogurt mixture (about 1 tablespoon) on top of the frozen peanut butter layer in each liner. Smooth it out evenly with a small spatula or the back of a spoon.

            Top with Peanut Butter: Using the reserved peanut butter mixture, add a small dollop on top of the yogurt layer in each cup for an extra peanut butter kick.

              Coat in Chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.

                Add Chocolate Layer: Carefully spoon the melted chocolate over the peanut butter and yogurt layers, ensuring it covers the top. Use a small spatula to spread it evenly.

                  Final Freeze: Return the muffin tin to the freezer and let the cups freeze for another hour or until completely set.
