1 cup almond flour

1/2 cup oat flour

1/4 cup coconut sugar

1/4 cup maple syrup

1/4 cup almond or peanut butter

1 tsp vanilla extract

1/2 tsp sea salt

1/2 cup vegan chocolate chips

For the Matcha Frozen Yogurt Layer:

2 cups Greek yogurt (or dairy-free yogurt for a vegan option)

1/4 cup honey or agave syrup (adjust based on taste)

2-3 tsp matcha powder (adjust based on preference)

1 tsp vanilla extract

Pinch of sea salt

For Topping:

Crushed walnuts or almonds (optional)

Additional chocolate chips (optional)

A sprinkle of matcha powder

Instructions
 

Prepare the Cookie Dough Layer:

    - In a large mixing bowl, combine almond flour, oat flour, coconut sugar, sea salt, and mix well.

      - Add the maple syrup, almond or peanut butter, and vanilla extract. Stir until a dough forms.

        - Fold in the vegan chocolate chips until evenly distributed.

          - Line an 8x8 inch (or similar size) baking dish with parchment paper, allowing some overhang for easy removal.

            - Spread the cookie dough mixture evenly in the bottom of the prepared dish. Press down firmly to create an even layer. Place in the freezer while you prepare the next layer.

              Make the Matcha Frozen Yogurt:

                - In a medium bowl, whisk together the Greek yogurt, honey/agave syrup, matcha powder, vanilla extract, and a pinch of sea salt until smooth and well combined.

                  - Taste the mixture and adjust sweetness or matcha intensity as desired.

                    Assemble the Bars:

                      - Remove the cookie dough base from the freezer. Pour the matcha frozen yogurt mixture over the cookie dough layer and spread evenly with a spatula.

                        - If desired, sprinkle crushed walnuts, additional chocolate chips, or a hint of extra matcha powder on top for added flavor and texture.

                          Freeze the Bars:
