Ingredients
  

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1 cup almond flour

1/2 cup finely chopped almonds, toasted

1/4 teaspoon sea salt

2 tablespoons coconut oil, melted

1/2 cup dark chocolate chips (or dairy-free chocolate chips for a vegan option)

A pinch of flaky sea salt for garnish

Instructions
 

Prepare the Yogurt Mixture:

    In a mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, fresh lemon juice, and vanilla extract. Stir thoroughly until all ingredients are well integrated.

      Incorporate the Almond Ingredients:

        Gradually add the almond flour and sea salt to the yogurt mixture, mixing until a thick and creamy dough forms. Make sure the almond flour is fully incorporated.

          Form the Truffles:

            Using your hands, scoop out small amounts of the dough (about 1 tablespoon each) and roll them into balls. Place the truffles on a parchment-lined baking sheet. Once all the mixture is shaped, freeze the tray for about 30-40 minutes or until firm.

              Melt the Chocolate:

                While the truffles are freezing, melt the dark chocolate chips along with the coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring after each until smooth and fully melted.

                  Coat the Truffles:

                    Once the truffles are firm, remove them from the freezer. Dip each truffle into the melted chocolate to coat it completely. Use a fork to lift the truffles out, letting excess chocolate drip off before placing them back on the parchment paper.

                      Garnish:

                        While the chocolate is still wet, sprinkle a tiny pinch of flaky sea salt on top of each truffle for an extra flavor pop.

                          Final Freeze:

                            Place the chocolate-coated truffles back in the freezer for at least another 30 minutes, or until the chocolate is set.

                              Serve:

                                Once fully frozen, serve the truffles immediately or store them in an airtight container in the freezer for up to two weeks.
