Frozen Yogurt Honey Apple Muffin Disks

1 ½ cups rolled oats

1 cup Greek yogurt (plain or vanilla)

½ cup honey (plus extra for drizzling)

1 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon cinnamon

½ cup diced apples (preferably Granny Smith or Honeycrisp)

¼ cup chopped walnuts (optional)

¼ teaspoon salt

Cooking spray or parchment paper

Instructions
 

Preheat the oven:

    Preheat your oven to 350°F (175°C). Prepare a muffin tin by lightly coating it with cooking spray or lining it with parchment paper.

      Mix the wet ingredients:

        In a large mixing bowl, combine the Greek yogurt, honey, applesauce, eggs, and vanilla extract. Whisk until the mixture is smooth and well blended.

          Combine the dry ingredients:

            In another bowl, mix the rolled oats, baking soda, cinnamon, and salt. Stir until the ingredients are evenly distributed.

              Combine wet and dry:

                Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing. Gently fold in the diced apples and walnuts, if using.

                  Spoon into muffin tins:

                    Using a spoon or ice cream scoop, fill each muffin cup to about ¾ full with the batter. Flatten the tops slightly to create a disk shape.

                      Bake the disks:

                        Place the muffin tin in the preheated oven and bake for about 15-18 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                          Cool and freeze:

                            Once baked, remove the muffin disks from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack. Let them cool completely.

                              Freeze the muffin disks:

                                Once cooled, place the muffin disks in a single layer on a baking sheet and freeze for about 1-2 hours until solid. After freezing, transfer them to an airtight container or a freezer bag for long-term storage.

                                  Serve:

                                    When ready to enjoy, take out a disk, let it thaw for a few minutes, and drizzle with extra honey before serving. These make an excellent snack or breakfast treat!
