Ingredients

1 cup Greek yogurt (plain or vanilla)

2 cups fresh or dried figs, chopped

1/4 cup honey (adjust to taste)

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/4 cup chopped walnuts or almonds (optional for crunch)

1 tablespoon lemon juice (optional, for a tangy kick)

Instructions

Prepare the Figs: If using fresh figs, wash and chop them into small pieces. If using dried figs, soak them in warm water for about 10 minutes to rehydrate, then chop.

Combine Ingredients: In a medium mixing bowl, combine the Greek yogurt, honey, vanilla extract, ground cinnamon, and sea salt. Mix well until the ingredients are thoroughly combined and the mixture is smooth. Adjust the sweetness of the yogurt by adding more honey if desired.

Add Figs and Nuts: Gently fold in the chopped figs and, if using, the chopped walnuts or almonds. If you’re using lemon juice for a tangy flavor, add it at this stage.

Prepare the Pan: Line an 8x8-inch square baking dish or a similar-sized container with parchment paper, leaving some overhang for easy removal.

Pour Mixture: Pour the yogurt mixture into the prepared dish and spread it evenly with a spatula. Smooth the top for an even finish.

Freeze: Cover the dish with plastic wrap or a lid, and place it in the freezer. Freeze for at least 4 hours or until completely set.

Cut into Bars: Once frozen, remove the dish from the freezer. Lift the frozen yogurt out using the parchment paper overhang. Place it on a cutting board and cut it into bars of your desired size.

Serve and Enjoy: Serve immediately or store the bars in an airtight container in the freezer for up to two weeks. Enjoy these refreshing treats straight from the freezer!
