Ingredients

1 cup Greek yogurt (plain or vanilla)

1 cup coconut cream (canned, thick part)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup dried cranberries, roughly chopped

1/3 cup white chocolate chips (or dairy-free alternative)

1/4 cup sliced almonds (optional)

Pinch of sea salt

1/2 cup granola (for added crunch, optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt and coconut cream until smooth and creamy.

Sweeten It Up: Add honey (or maple syrup), vanilla extract, and a pinch of sea salt to the mixture. Stir until everything is well incorporated and smooth.

Incorporate Add-ins: Fold in the chopped dried cranberries, white chocolate chips, and sliced almonds gently until evenly dispersed throughout the mixture.

Line the Tray: Line a baking dish (8x8 inches recommended) with parchment paper, allowing some overhang for easy removal later.

Pour and Spread: Pour the yogurt mixture into the lined baking dish and spread it out evenly with a spatula.

Add Crunch (Optional): If you want a crunchy topping, sprinkle the granola evenly on top of the mixture.

Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4-6 hours, or until fully set.

Slice and Serve: Once frozen, remove the yogurt slab from the dish by lifting the parchment paper. Slice into bars using a sharp knife.

Enjoy or Store: Serve immediately or store in an airtight container in the freezer, separated by parchment paper to prevent sticking.
