Ingredients

1 cup rolled oats

1/2 cup almond flour

1/4 cup maple syrup

1/4 cup crunchy peanut butter (or nut butter of choice)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup mini chocolate chips

1 cup plain Greek yogurt (or plant-based yogurt)

1 tablespoon honey or agave syrup (optional, for sweetening yogurt)

Additional toppings: shredded coconut, chopped nuts, or sprinkles (optional)

Instructions

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, and sea salt. Stir until well mixed.

Blend the Wet Ingredients: In another bowl, whisk together the maple syrup, peanut butter, and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet mixture over the dry ingredients. Mix until everything is combined evenly. Fold in the mini chocolate chips for a delightful cookie dough flavor!

Form the Bites: Using your hands, form small bite-sized balls from the mixture and place them on a parchment-lined baking sheet. You should yield about 12-15 bites depending on the size.

Chill: Place the baking sheet in the freezer for about 30 minutes to firm the bites.

Prepare the Yogurt Dip: In a separate bowl, mix the Greek yogurt with honey or agave syrup if you prefer a sweeter dip. Stir well.

Serve: After the bites are firm, remove them from the freezer. Serve them with the yogurt dip on the side. You can also roll the bites in shredded coconut, chopped nuts, or sprinkles for added fun!

Store Leftovers: Keep any leftovers in an airtight container in the freezer for a quick and healthy snack anytime!
