Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup granulated sugar (or honey for a healthier twist)

1 cup cinnamon rolls dough (store-bought or homemade)

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

½ cup milk (any kind)

½ cup cream cheese (softened)

¼ cup powdered sugar (for frosting)

¼ cup chopped pecans (optional, for garnish)

Instructions

Prepare the Cinnamon Roll Dough:

If using store-bought cinnamon roll dough, roll it out on a lightly floured surface and stretch it to about ½ inch thick. For homemade dough, use your favorite cinnamon roll recipe.

      Make the Filling:

In a small bowl, mix together ½ cup granulated sugar, 1 teaspoon ground cinnamon, and a dab of softened butter (optional), then spread this mixture evenly over the rolled-out dough. Roll it back into a tight log and cut into 1/2 inch slices.

          Bake the Cinnamon Roll Bites:

Preheat your oven to 375°F (190°C). Place the cinnamon roll slices in a baking dish and bake according to package instructions or until golden brown, about 15-20 minutes. Allow them to cool completely.

              Prepare the Frozen Yogurt Base:

In a large mixing bowl, combine Greek yogurt, 1 cup of granulated sugar, milk, vanilla extract, and the softened cream cheese. Mix until smooth and well combined.

                  Assemble the Bars:

Break the baked cinnamon roll bites into small pieces and fold them gently into the yogurt mixture until evenly distributed.

                      Freeze the Mixture:

Pour the cinnamon roll yogurt mixture into a lined 8x8 inch square baking dish, spreading it out evenly. Cover with plastic wrap or a lid and freeze for at least 4 hours or until set.

Make the Cream Cheese Frosting (Optional):

While the yogurt bars are freezing, prepare a quick cream cheese frosting by mixing the remaining powdered sugar with a dollop of cream cheese and a splash of milk until smooth.

                              Serve:

Once frozen, remove the yogurt bars from the dish and cut them into squares. Drizzle the cream cheese frosting over the top and sprinkle with chopped pecans if desired.
