2 cups plain Greek yogurt (or any flavored yogurt you prefer)

1/4 cup honey or maple syrup (adjust based on yogurt sweetness)

1 teaspoon vanilla extract

1/4 cup finely shredded coconut (optional)

1/4 cup raisins (optional, for added texture)

Instructions
 

Prepare Carrot Cake Base:

    - Preheat your oven to 350°F (175°C). Grease a 9x9 inch square baking dish or line it with parchment paper for easy removal.

      - In a large mixing bowl, combine the grated carrots, all-purpose flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until well combined.

        - In a separate bowl, whisk together the applesauce, vegetable oil, and vanilla extract. Pour this mixture into the dry ingredients and mix until just combined. If using, fold in nuts.
