Ingredients

2 cups fresh strawberries, hulled and roughly chopped

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: granola, coconut flakes, or chopped nuts

Instructions

Prepare the Strawberries: In a blender or food processor, add the chopped strawberries and blend until smooth. If you prefer a chunkier texture, reserve a few pieces of strawberry to fold in later.

Mix the Base: To the blended strawberries, add the Greek yogurt, honey, lemon juice, vanilla extract, and a pinch of salt. Blend again until everything is well combined and smooth.

Add Any Extras: If you reserved some strawberry pieces, fold them into the mixture gently for added texture.

Pour into Molds: Carefully pour the strawberry yogurt mixture into your popsicle molds, leaving a bit of space at the top for expansion.

Insert Sticks: If your molds require sticks, place them in now. If your molds have a lid, attach it to help keep the sticks upright.

Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until solid.

Unmold & Serve: Once fully frozen, run warm water over the outside of the molds for a few seconds to help release the pops. Gently pull them out and enjoy!

Add Toppings: For extra crunch and flavor, roll the pops in granola, sprinkle with coconut flakes, or dip them in chopped nuts before serving.

Prep Time: 15 minutes | Total Time: 6 hours | Servings: 6 pops
