Ingredients

2 cups fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup Greek yogurt (or dairy-free yogurt)

1 cup granola (your choice, preferably with nuts and seeds)

1/2 cup shredded coconut (unsweetened, optional)

1/4 cup chopped nuts (such as almonds or walnuts, optional)

Instructions

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with honey (or maple syrup) and vanilla extract. Toss gently until the strawberries are well-coated. Set aside to marinate for about 10-15 minutes to enhance their natural sweetness.

Create the Yogurt Base: In another bowl, mix the Greek yogurt with a splash of vanilla extract. If you like it sweeter, you can also stir in a little more honey or maple syrup to the yogurt mixture.

Assemble the Cups: Line a muffin tin with paper liners or silicone cupcake molds for easy removal. Spoon a dollop of yogurt into the bottom of each cup, filling them about a quarter full.

Add Strawberries: Add a layer of the marinated strawberries on top of the yogurt in each cup, packing them in slightly to mix with the yogurt.

Layer with Crunch: Sprinkle a layer of granola over the strawberries in each cup, followed by a tablespoon of shredded coconut and a sprinkle of chopped nuts, if using.

Repeat the Layers: Continue with another layer of yogurt, followed by more strawberries, granola, coconut, and nuts until the cups are filled nearly to the top. The final layer should have notable crunchy toppings for added texture.

Freeze the Cups: Place the muffin tin in the freezer and let the cups freeze for at least 4 hours, or until solid.

Serve: Once frozen, remove the cups from the muffin tin. Let them sit at room temperature for a few minutes for easier removal of the liners. Enjoy immediately or store in an airtight container in the freezer for up to a week.
