Ingredients

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup frozen raspberries

1/3 cup dark chocolate chips (optional)

1/3 cup chopped nuts (like almonds or pistachios, optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare Your Baking Sheet: Line a baking sheet (about 9x13 inches) with parchment paper, allowing some overhang to make removal easier later.

Mix the Yogurt Base: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until well combined and smooth.

Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet, spreading it out evenly with a spatula until it's about 1/4 inch thick.

Add Raspberries: Scatter the frozen raspberries over the yogurt layer. Gently press them down to ensure they get embedded into the yogurt.

Add Toppings: If desired, sprinkle the dark chocolate chips and chopped nuts over the top of the yogurt and raspberries. This adds extra texture and flavor.

Freeze: Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until completely solid.

Cut and Serve: Once frozen, remove the yogurt bark from the freezer. Lift the edges of the parchment to pull it out of the baking sheet, then place it on a cutting board. Cut into pieces of your desired size (typically squares or rectangles).

Garnish (Optional): If desired, garnish with fresh mint leaves before serving.

Store Leftovers: Store any leftovers in an airtight container in the freezer for up to 2 weeks.
