Ingredients

2 cups plain Greek yogurt

1 cup canned pumpkin puree

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

Pinch of salt

Optional: chopped nuts or granola for topping

Instructions

Mix the Base: In a large mixing bowl, combine the Greek yogurt and pumpkin puree. Stir until smooth and well-blended.

Sweeten It Up: Add honey or maple syrup, vanilla extract, ground cinnamon, nutmeg, ginger, cloves, and a pinch of salt to the pumpkin-yogurt mixture. Mix thoroughly until all ingredients are evenly incorporated.

Taste Test: Give the mixture a quick taste and adjust sweetness if necessary by adding a bit more honey or maple syrup.

Fill the Trays: Pour the mixture into ice cube trays or silicone molds, filling each compartment about three-quarters full to allow for expansion as they freeze.

Smooth the Surface: Use a spatula or the back of a spoon to smooth out the tops for a clean presentation.

Freeze: Place the filled trays in the freezer and allow to freeze for at least 4 hours or until solid.

Pop and Store: Once fully frozen, carefully pop the yogurt cubes out of the trays. Store them in an airtight container or freezer bag for future use.

Serve: Enjoy them as a cold, refreshing snack, or blend them into smoothies for a pumpkin spice twist. You can also sprinkle some chopped nuts or granola on top for extra crunch!
