2 cups fresh or frozen pineapple chunks

1 cup full-fat coconut milk

1/4 cup shredded unsweetened coconut

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

Pinch of sea salt

Optional: extra shredded coconut or chopped nuts for topping

Blend Ingredients: In a blender or food processor, combine the pineapple chunks, coconut milk, honey or maple syrup, shredded coconut, lime juice, vanilla extract, and a pinch of sea salt. Blend until smooth and creamy.

    Taste and Adjust: Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup. Blend again briefly to combine.

      Prepare the Mold: Pour the pineapple coconut mixture into silicone molds or a compatible baking dish lined with parchment paper. If using a baking dish, spread evenly with a spatula.
