Ingredients

1 cup creamy peanut butter (natural)

1/2 cup honey or maple syrup

2 cups rolled oats (old-fashioned)

1/2 cup mini chocolate chips (optional)

1/4 cup shredded coconut (unsweetened, optional)

1/4 cup chopped nuts (almonds or walnuts, optional)

1 tsp vanilla extract

A pinch of salt

Instructions

Prepare the Mixture: In a large mixing bowl, combine the creamy peanut butter and honey (or maple syrup). Use a spatula to mix them thoroughly until you achieve a smooth consistency.

Add Flavor and Texture: Stir in the vanilla extract and a pinch of salt. Mix well. If desired, add the mini chocolate chips, shredded coconut, and chopped nuts for additional flavor and texture.

Incorporate the Oats: Gradually fold in the rolled oats to the peanut butter mixture, ensuring that all the oats are evenly coated. The mixture should be thick and sticky.

Shape the Clusters: Line a baking sheet with parchment paper. Use a tablespoon or a small cookie scoop to drop clusters of the mixture onto the prepared baking sheet, spacing them a couple of inches apart.

Freeze: Place the baking sheet in the freezer for about 1-2 hours, or until the clusters are firm and frozen through.

Store and Enjoy: Once frozen, transfer the clusters to an airtight container or a freezer bag. Store them in the freezer for up to 3 months. Enjoy them as a quick snack or a healthy treat straight from the freezer!
