To create the perfect base for your Peachy Melba Summer Popsicles, start by preparing the peach puree. Selecting ripe, juicy peaches is crucial; they should yield slightly to pressure and have a fragrant aroma. Begin by washing the peaches thoroughly, then peel and pit them. Ingredients

4 ripe peaches, pitted and diced

1 cup Greek yogurt (plain or vanilla)

1 cup fresh raspberries (or frozen, thawed)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Instructions

Prepare the Peach Puree:

    - In a blender or food processor, add the diced peaches, honey (or maple syrup), lemon juice, and a pinch of salt. Blend until smooth. Taste and adjust sweetness if desired. Set aside.

      Make the Raspberry Swirl:

        - In a separate bowl, mash the raspberries with a fork until they are broken down but still have some texture. If desired, sweeten slightly with a little honey or maple syrup.

          Prepare the Yogurt Mixture:

            - In a mixing bowl, combine the Greek yogurt with vanilla extract. Stir until well integrated.

              Assemble the Popsicles:

                - Start by adding a layer of peach puree into each popsicle mold, filling it about a third of the way.

                  - Next, add a layer of the yogurt mixture, filling another third of the mold.

                    - Finally, add a layer of the raspberry mixture on top, swirling it slightly with a skewer or toothpick for a marbled effect.

                      Freeze:

                        - Insert the popsicle sticks and place the molds in the freezer. Freeze for at least 4-6 hours or until completely solid.

                          Serve:

                            - Once frozen, run warm water over the outside of the molds for a few seconds to help release the popsicles. Gently pull them out and enjoy these refreshing treats!
