Ingredients

1 cup plain Greek yogurt

2 tablespoons honey (or maple syrup for a vegan alternative)

Zest of 1 large lemon

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1/4 teaspoon vanilla extract

1/4 cup chia seeds

Pinch of salt

Optional topping: Finely chopped nuts, shredded coconut, or lemon zest for garnish

Instructions

Prepare the Mixture: In a medium bowl, combine the Greek yogurt, honey, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Whisk until smooth and well combined.

Add Chia Seeds: Gently fold in the chia seeds to the yogurt mixture. Ensure they are evenly distributed throughout the mixture.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. This allows the chia seeds to hydrate and expand, giving the drops a better texture.

Scoop and Shape: Once the mixture has set, remove it from the refrigerator. Using a small cookie scoop or a tablespoon, drop dollops of the mixture onto a parchment-lined baking sheet, spacing them about an inch apart.

Freeze: Place the baking sheet in the freezer for about 2-3 hours, or until the drops are completely frozen.

Serve and Store: Once frozen, transfer the drops to an airtight container and store them in the freezer for up to 2 weeks. Serve them straight from the freezer, optionally garnished with your choice of toppings, for a refreshing treat!
