Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup fresh lemon juice

Zest of 2 lemons

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup granola (your favorite kind)

1 cup crushed graham crackers (about 5-6 full sheets)

1/4 cup powdered sugar (optional, for sweetness)

Fresh mint leaves (for garnish)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, honey or maple syrup, and vanilla extract. Mix well until smooth and creamy. Taste and adjust sweetness if necessary.

Set Up the Stacks: Take a muffin tin or silicone molds and lay them flat on your countertop. Start by placing a tablespoon of the yogurt mixture at the bottom of each cup and gently spread it evenly.

Add Layers: On top of the yogurt layer, sprinkle a thin layer of crushed graham crackers, followed by a layer of granola. Repeat this layering process until you reach the top of each mold, finishing with a yogurt layer.

Freeze: Cover the muffin tin or silicone molds with plastic wrap or a lid, and place it in the freezer. Let freeze for at least 4-6 hours or until completely solid.

Unmold the Stacks: Once frozen, remove the stacks from the mold by gently pulling on the sides or using a butter knife to loosen the edges. If using a muffin tin, you may need to let them sit at room temperature for a few minutes to soften slightly.

Serve: Place the frozen yogurt stacks on a serving plate. Dust with powdered sugar if desired and garnish with fresh mint leaves. Serve immediately and enjoy the refreshing tartness of the lemon pie flavors!
