2 cups plain coconut yogurt (unsweetened)

1/4 cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup almond slices (or chopped almonds)

1/2 cup shredded coconut (unsweetened)

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions
 

Prepare the Yogurt Mixture: In a mixing bowl, combine the coconut yogurt, honey (or maple syrup), vanilla extract, and sea salt. Whisk until smooth and well incorporated.

    Add the Almonds and Coconut: Gently fold in the almond slices and shredded coconut into the yogurt mixture, ensuring they are evenly distributed.

      Mold the Disks: Line a baking sheet with parchment paper. Using a cookie scoop or spoon, drop spoonfuls of the mixture onto the prepared baking sheet. Flatten each scoop gently with the back of the scoop to form disk shapes, about 1/2 inch thick.

        Freeze the Disks: Place the baking sheet in the freezer for about 2-3 hours, or until the disks are fully frozen.

          Drizzle with Chocolate (Optional): If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until melted and smooth. Once the disks are frozen, remove them from the freezer and drizzle the melted chocolate over each disk using a fork.

            Final Freeze: Return the disks to the freezer for an additional 30 minutes to set the chocolate.
