Ingredients

2 cups Greek yogurt (plain or vanilla)

1/3 cup granulated sugar

1 tsp cinnamon

1/2 tsp vanilla extract

1/4 cup chocolate chips (optional)

1 cup crushed graham crackers (for coating)

Cooking spray or oil for greasing

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, granulated sugar, cinnamon, and vanilla extract. Stir well until fully mixed and smooth.

Add Optional Chocolate: If you’re adding chocolate chips, fold them into the yogurt mixture to distribute evenly. This step is optional for those who prefer pure churro flavor.

Line the Tray: Line a baking tray with parchment paper or silicone mat. This will prevent the bites from sticking.

Scoop and Shape: Using a small ice cream scoop or a spoon, scoop out the yogurt mixture and place them on the prepared tray. Press them slightly to flatten and create bite-sized discs.

Coat the Bites: In a shallow dish, combine the crushed graham crackers with an additional pinch of sugar and cinnamon if desired. Roll each yogurt disc in the graham cracker mixture until well coated.

Freeze the Bites: Spray the tops of the coated yogurt bites lightly with cooking spray or brush with a tiny amount of oil to help them get crispy. Place the tray in the freezer for at least 4 hours or until the bites are completely frozen.

Serve: Once frozen, remove the churro yogurt bites from the freezer and let them sit at room temperature for a few minutes for easier removal from the tray. Enjoy immediately as a refreshing treat, or store them in a freezer bag for later enjoyment!
