Frozen Blueberry Lemon Yogurt Bars

2 cups plain Greek yogurt

1 cup fresh blueberries (or frozen, thawed)

1/4 cup honey or maple syrup (adjust for sweetness)

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

Optional: 1 tablespoon cornstarch (for thicker consistency)

Prepare the Blueberries: If you're using fresh blueberries, rinse them and pat dry. If using frozen, simply thaw and drain excess liquid. Set aside a few for topping later if desired.

    Blend the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt. Whisk until smooth and creamy.

      Incorporate the Blueberries: Gently fold the blueberries into the yogurt mixture. If you prefer some blueberry swirls, reserve a handful of blueberries and add them whole at the end.

        Thicken (Optional): If you want a thicker bar, you can dissolve the cornstarch in a couple of tablespoons of water, then stir this into your yogurt mixture until well combined.

          Prepare the Pan: Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving some overhang to make removing the bars easier later.

            Pour and Spread: Pour the yogurt mixture into the lined dish. Use a spatula to spread it evenly and smooth out the top. If you reserved blueberries, scatter them on top now.

              Freeze: Carefully place the dish in the freezer and freeze for at least 4 to 6 hours, or until fully set.

                Cut and Serve: Once frozen solid, lift the yogurt bars out of the dish using the parchment paper. Place them on a cutting board and cut into squares or rectangles. You can maintain the shape easily if you let them sit at room temperature for about 5 minutes before cutting.

                  Store: Keep any leftovers in an airtight container in the freezer for up to 2 weeks. Enjoy your refreshing treat!
